Ricotta is lighter and often less expensive than cream cheese.
Start by gathering mini croissants that are 2 to 3 days old.
Prepare about 1 to 1.5 cups of blueberries and set aside.
Take an 8 oz block of cream cheese and cut it into small cubes.
In a large bowl, crack 4 to 6 large eggs depending on the size of your batch.
Pour in 1.5 cups of milk and whisk together until mixed evenly.
Add 0.5 tsp of salt, 1.5 tsp of cinnamon, a splash of pure maple syrup, and sugar (optional) to the egg mixture and mix well.
Spray a baking dish with non-stick cooking spray.
Tear the croissants into pieces and layer them evenly in the bottom of the baking dish.
Distribute the cream cheese cubes over the croissant layer.
Sprinkle the blueberries over the croissants and cream cheese.
Add more torn croissants on top for presentation.
Pour the custard mixture over the croissant layers, ensuring they are soaked.
Press down on the croissants to help them soak up the custard.
Cover the dish and refrigerate for 30 minutes.
Preheat the oven to 375°F.
After 30 minutes, place the dish in the oven uncovered for about 30 minutes.
Check the French toast every 15 to 20 minutes; if it starts to brown too much, cover with foil.
While baking, prepare the whipped cream by adding heavy whipping cream to a bowl.
Add a splash of vanilla extract to the cream.
Using an electric mixer, whip the cream for 2 to 3 minutes until soft peaks form.
Add 1/4 cup of powdered sugar to sweeten the whipped cream and mix until stiff peaks form.
Optionally, add about half a tablespoon of maple syrup to the whipped cream for flavor.
Once the French toast is done baking, remove it from the oven and let it cool slightly.
Garnish with powdered sugar before serving.
Serve with additional powdered sugar and maple syrup.
