1 & 1/2 cups mushrooms (500g)
2 cups fresh spinach
1 cup pepper jack cheese
2 tablespoons honey
1/2 teaspoon Tabasco sauce
1 teaspoon gochugaru or chili pepper powder

Debone the chicken thighs and remove excess skin.

Open up the thick parts of the chicken thighs without cutting through.

Cover the chicken with saran wrap.

Use the flat side of a meat mallet to flatten the chicken out.

Repeat the steps for however many chicken thighs you are cooking.

Prepare the marinade by combining 1 tablespoon of soy sauce, 1 tablespoon of Worcestershire sauce, 1 tablespoon of garlic powder, 1 teaspoon of cayenne pepper, fresh ground black pepper, and 1 tablespoon of olive oil.

Marinate the chicken in the refrigerator for 20-30 minutes.

Chop 1 onion and add 1 tablespoon of vegetable oil to a heated pan.

Add 2 tablespoons of butter to the pan to prevent burning.

Add the chopped onion and cook for 15 minutes until sweet and tender, seasoning with salt and pepper to taste.

Slice 1 & 1/2 cups of mushrooms (500g) and cook until soft.

Grate 1 cup (350g) of pepper jack cheese.

Add the filling mixture to the marinated chicken thighs and roll the chicken completely over the filling.

Bake the rolled chicken for 20 minutes at 375°F (190°C).

Prepare the glaze sauce by mixing 2 tablespoons of honey, 2 tablespoons of soy sauce, 1/2 teaspoon of Tabasco sauce, and 1 teaspoon of gochugaru or chili pepper powder.
