Cut boneless skinless chicken thighs into bite-sized pieces.
In a bowl, mix chicken with 1/2 teaspoon garlic, 1/2 teaspoon ginger, 1 teaspoon apple cider vinegar, 1 teaspoon sesame seed oil, 1/4 teaspoon crushed black pepper, 1 teaspoon soy sauce, the white portion of 1 egg, and 1 tablespoon corn starch.
Let the chicken mixture sit for half an hour.
In another bowl, combine 1 cup chicken broth, 2 tablespoons soy sauce, 1 tablespoon dark soy sauce, 2 tablespoons tomato ketchup, 1 tablespoon mushroom sauce, 1 tablespoon green chili sauce, 1 teaspoon sesame oil, 1 teaspoon sugar (optional), and 1 tablespoon corn starch. Mix until smooth.
In a wide pan or skillet, heat 4 tablespoons of oil over medium-high heat.
Add the marinated chicken to the pan, spreading it out in a single layer. Fry for about 2 minutes until slightly brown on one side, then stir on high heat for a few minutes.
Add 1/4 cup of water, cover the pan, and let the chicken cook on medium to low heat for about 15 minutes.
After 15 minutes, add chopped garlic and stir on high heat for 1 minute.
Add chopped onions, mushrooms, and red bell pepper to the pan. Stir-fry the vegetables with the chicken on high heat.
Optionally, add 1 heaped teaspoon of Kashmir red chili powder and whole Fresno chilies. Stir for 4 to 5 minutes.
Pour the prepared sauce into the pan and sprinkle a pinch of salt and a pinch of ground black pepper. Allow the sauce to come to a bubbling boil over high heat.
Add the greens of green onions and 1 teaspoon of garam masala powder. Stir to combine.
