Heat a little avocado or olive oil over medium heat in a large pot.

Add sliced sausage and cook until browned on both sides, stirring occasionally. Remove the sausage.

Add a little more oil, then add garlic, onions, bell pepper, and celery to the pot.

Saute until softened, about 5 to 7 minutes over medium heat.

Add cajun seasoning, starting with 1.5 tablespoons black pepper, salt, and cayenne pepper to the pot and stir.

Add tomatoes, chicken broth, and the cooked sausage back to the pot and stir again.

Bring the mixture to a boil, then reduce heat to low and simmer for 25 to 35 minutes or until thickened and liquid is reduced.

Stir in shrimp and cauliflower rice, cooking on low until the rice is heated through and the shrimp turn pink and are no longer translucent. Do not overcook the shrimp.

Ladle into bowls and top with sliced green onions and parsley. Serve with Louisiana hot sauce.
