Olive oil reduces saturated fat while maintaining flavor.

Haddock is a leaner option, while pollock is often less expensive.
Season all-purpose flour with salt in a clean plate.
Lightly coat both sides of 4 pieces of cod fillets with the salted flour.
Heat a good size pan and add 35 g of butter and 2 tablespoons of olive oil.
Once the pan is hot, add the cod fillets two at a time, shaking off excess flour.
Cook for 1 minute on each side until it develops a little bit of color.
Remove the cod fillets and repeat with the remaining two fillets.
Add a touch more olive oil and smashed garlic to the pan.
Add 2 tablespoons of capers and a jar of artichokes, mixing well.
Pour in 4 oz of white wine and let it cook down.
Add 4 oz of water and bring to a boil.
Return the cod fillets to the pan to finish cooking.
Adjust salt if needed, then add 20 g of cold butter and a squeeze of half a lemon.
Garnish with fresh parsley and serve with egg noodles, pasta, or by itself.
