100 ml room temperature water
500 g flour for bread
7 g dry yeast
1 teaspoon salt
350 ml warm water

Mix the seed mix with 100 ml of room temperature water and leave to hydrate for 30 minutes.

In a bowl, combine 500 g of flour and 7 g of dry yeast.

Add the hydrated seeds and 350 ml of warm water to the flour mixture.

Knead the dough and let it rest for 30 minutes.

After 30 minutes, perform a set of folding and stretching on the dough.

After another 15 minutes, repeat the folding and stretching process once more.

Leave the dough to rise at room temperature for 30-40 minutes.

Divide the dough into 4 pieces and shape them carefully, avoiding pressing too hard to retain air bubbles.

Use a lot of flour as the dough is soft and sticky.

Place the shaped pieces on a baking tray lined with baking paper and cover with a towel, leaving them at room temperature for 20 minutes.

Preheat the oven to 220°C (428°F).
