Bring a pot of water to boil and add a little salt.
Cook lasagna noodles according to the box instructions until al dente.
Heat 2 tablespoons of olive oil in a skillet over medium heat.
Add chopped onions and cook until soft for about 3 to 5 minutes.
Add chopped garlic and cook for another minute.
Add mushrooms and cook for about 8 minutes to allow them to release moisture.
Add spinach and cover to wilt it down, stirring occasionally.
Season the spinach mixture with salt and pepper, then turn off the heat and set aside.
Melt 4 tablespoons of butter in a saucepan.
Sprinkle in flour and mix for about 1 to 2 minutes until golden brown.
Whisk in heavy whipping cream slowly and cook for about 5 to 7 minutes until slightly thickened.
Add a little salt and pepper to the sauce, then remove from heat and set aside.
In a bowl, mix ricotta cheese, beaten egg, and half a cup of mozzarella cheese with a dash of salt until combined.
Spread a thin layer of white sauce on the bottom of a baking dish.
Place about 4 lasagna noodles slightly overlapping at the bottom of the dish.
Spread a third to half of the ricotta mixture over the noodles.
Add a third of the spinach mixture on top of the ricotta.
Sprinkle mozzarella and parmesan cheese over the spinach mixture.
Repeat the layering process: add more white sauce, noodles, ricotta mixture, spinach mixture, and cheeses until all ingredients are used, finishing with a layer of white sauce and remaining mozzarella and parmesan on top.
Spray aluminum foil with cooking spray and cover the baking dish tightly.
Preheat the oven to 375°F (190°C).
Bake covered for 25 minutes.
Remove the foil and bake for an additional 10 to 15 minutes until cheese is browned.
Broil for an additional 2 minutes to brown the cheese on top if desired.
Let the lasagna rest for about 10 minutes before slicing and serving.
