Prepare the batter in a mixing bowl by putting 200 grams of wheat flour, 50 grams of potato starch, half teaspoon of salt, and 1 teaspoon of sugar. Mix well.

Add half teaspoon of baking powder and mix again.

Incorporate 2 eggs into the mixture and combine.

Gradually add 35 centimeters of water until the batter is smooth with no lumps.

Add 1 tablespoon of dashi powder and mix until dissolved. Cover and leave in the fridge for at least two hours.

Prepare the sauce by mixing 1 tablespoon of sugar, 2 tablespoons of oyster sauce, 4 tablespoons of ketchup, and 3 tablespoons of Worcestershire sauce in a bowl. Keep it in the fridge.

Mince 3 green onions, chop 250 grams of green cabbage, and grate 50 grams of pickled ginger. Grate 50 grams of cheese and cut 3 shallots.

In a pan heated to medium heat, add 10 centimeters of vegetable oil and the shallots. Stir occasionally until they start to turn golden, then reduce the heat and stir constantly until golden. Drain and set aside.

Toast a sheet of nori seaweed over the fire for about 20 seconds and blend it to a fine powder.

Take the batter out of the fridge, mix briefly, and add the green cabbage, pickled ginger, cheese, and green onions. Add ground pepper and combine.

In the pan, heat 1 tablespoon of shallot oil over medium heat. When hot, pour in a ladle of the batter and place 4 slices of bacon on top. Cover and cook for 3 minutes.

Remove the lid and cook for another 2 minutes, gently shaking the pan for even cooking. Flip the pancake and cover again, cooking for 5 minutes.

Flip it over again and cook for an additional 2 minutes to brown the underside.

Sprinkle with fried shallots, sesame seeds, nori flakes, sauce, mayonnaise, green onion, and dry bonito flakes before serving.
