Mix sourdough starter, water, and olive oil in a large bowl until combined.
Add all-purpose flour, salt, and sugar to the mixture and stir until a shaggy dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 4-6 hours at room temperature until doubled in size.
Gently deflate the dough and fold in chopped cherry tomatoes, minced garlic, and chopped basil.
Shape the dough into a rectangle and place it on a floured baking sheet.
Cover the dough with a cloth and let it rise for another 1-2 hours until puffy.
Preheat the oven to 450°F (230°C) with a baking stone inside if available.
Sprinkle the dough with black pepper and grated parmesan cheese before baking.
Transfer the baking sheet to the oven and bake for 20-25 minutes until golden brown.
Remove the ciabatta from the oven and let it cool on a wire rack for at least 30 minutes before slicing.
