Spoon the egg and bacon mixture onto the center of each tortilla.
Top with chopped green onions, sour cream, and hot sauce as desired.
Fold the sides of the tortilla over the filling, then roll it up from the bottom to enclose the filling.
Heat a clean skillet over medium heat and place the burrito seam-side down, cooking until golden, about 2-3 minutes per side.
Serve the burritos with crispy tater tots on the side.
