Cut the white onion into cubes.
Cut the sweet potatoes into cubes, about 400 grams total.
Heat 2-3 tablespoons of vegetable oil in a pan over medium-high heat.
Add the onion and sweet potatoes to the pan; cook for 7-10 minutes until the onion is golden and caramelized.
Add 2 tablespoons of Thai curry paste to the pan; cook for an additional 2 minutes to enhance the flavor.
Stir in 0.5 teaspoon of salt.
Add 100 grams of washed red lentils to the pan; cook like risotto, gradually adding vegetable stock or chicken stock.
Cook for about 10 minutes, ensuring lentils still have a bit of a bite.
Add 1 fresh chopped tomato halfway through the cooking process.
Pour in 200 milliliters of coconut milk; cover with a lid and let it cook for a few more minutes.
