In a large pot over medium hot heat, add some oil.

Add 1 diced onion and carrots to the pot.

Since I didn't have celery, I added 1 diced apple instead.

Add minced garlic and season with salt and pepper.

Cook this mixture and stir for about 10 minutes.

Add 1 zucchini, 1 can diced tomatoes, 1 can black beans, 1 cup quinoa, and cumin to the pot.

Pour in 8 cups of vegetable broth and stir all the ingredients together.

Bring to a boil and cook for about 13 minutes or until the quinoa is tender.

Once the quinoa is done cooking, remove the lid and add kale.

Stir in the kale until it's nice and soft.

Stir in lemon juice, season with a little more salt and pepper, and add red pepper flakes.

Stir everything one more time to combine and you are done.
