Get your roasting pan or dish and put 1/2 head of garlic in it.

Slice up 1 large onion (or 2 onions) into thick slices or chunks and add to the pan.

Cut 1 large carrot into chunks and add to the pan.

Drizzle olive oil over the vegetables in the pan and rub it in.

Pat dry the chicken again to ensure the marinade sticks.

Mix melted butter, olive oil, minced thyme, minced savory, minced rosemary, allspice, black pepper, salt, all-purpose seasoning, and paprika together.

Flip the chicken over and rub the marinade on the underside.

Place the chicken in the oven and then turn it down to 425°F (220°C).

Cook the chicken for 1.5 hours, basting every 20 to 30 minutes.
