Add oats to a food processor.
Add ground almonds to the food processor.
Add dates to the food processor for sweetness.
Blend the mixture until it forms a crumb texture.
Spoon the crumble mix into serving glasses and press down using a rolling pin or the back of a spoon.
Add 1 tablespoon of chia seeds and a little lemon zest to the yogurt, then mix them in.
Pour the yogurt mixture onto the cheesecake base.
Refrigerate for 20-30 minutes to thicken the yogurt.
Prepare blueberry compote to top the cheesecake after chilling.
For the apple and blackberry crumble, add cinnamon to the oat base.
Mix yogurt with chia seeds and a dash of vanilla essence, then refrigerate for 15 minutes.
Dice the apple and add it to a pan with blackberries, maple syrup, lemon juice, and a splash of water.
Stew the apple and blackberries until cooked.
Mix oats with maple syrup and olive oil, then spread them on baking parchment in an air fryer.
Air fry the oats for 10-15 minutes at 180°C, stirring halfway through.
Once golden brown, let the oats cool until crispy.
Spoon the stewed apple and blackberries on top of the yogurt layer.
Sprinkle the toasted oats on top of the fruit layer.
Dust with cinnamon if desired.
For the Black Forest gateau variation, split the yogurt into two batches, adding vanilla essence to one and cocoa powder to the other.
Layer the chocolate yogurt and vanilla yogurt in the serving glasses.
Top with defrosted cherries and finish with grated dark chocolate.
