2 beaten egg yolks
1 and 1/2 cups pale ale (or water)
1 cup water (or buttermilk)
3 lbs chicken, cut into six pieces
1 quart vegetable or peanut oil

In a medium bowl, add 3 cups of flour, 1 and 1/2 teaspoons of garlic salt, 1 tablespoon of ground black pepper, 1/4 teaspoon of poultry seasoning, and 1 tablespoon of paprika. Whisk together to combine.

If you prefer spicy fried chicken, whisk in 1 tablespoon of cayenne pepper and 1 tablespoon of Cajun seasoning.

In a separate bowl, add 1 and 1/3 cups of flour, 1 teaspoon of salt, 1/4 teaspoon of ground black pepper, 2 beaten egg yolks, and 1 and 1/2 cups of your favorite beer (using pale ale). Whisk the batter together until no lumps remain. Adjust the thickness of the batter by adding additional beer or water if necessary.

Heat the oil to 350°F in a deep pot or deep fryer, using about 1 quart of vegetable or peanut oil.

While the oil heats, add 1 cup of water (or buttermilk) and dip each piece of chicken into the water.

Take a 3 lb chicken cut into six pieces and working in batches, dip each piece into the flour coating, shaking off the excess flour.

Dip each piece into the batter and back into the flour coating once more for a triple dip.

Carefully place each of the chicken pieces into the hot oil, working in batches to prevent the oil temperature from dropping too quickly, which could make the coating soggy.

Fry the chicken until deep golden brown and cooked through, about 10 to 20 minutes depending on the cut of chicken used. Ensure all chicken reaches an internal temperature of 165°F.

Remove the fried chicken and place it on a paper bag or paper towel to drain before serving.
