Add 2 cups of milk and 1/2 cup of oil to a blender.
Blend the liquid ingredients until well combined.
Add 3 eggs to the blender and blend again.
Add 3 tablespoons of grated cheese and 1 tablespoon of baking powder to the blender.
Add 1 teaspoon of salt and blend until smooth.
Pour a little oil into a skillet and heat it on low.
Pour half of the blended mixture into the skillet.
Add slices of mozzarella cheese and tomato on top of the mixture in the skillet.
Cover the skillet and cook on low heat for 5 minutes, checking occasionally.
After 5 minutes, check if it’s set by touching the surface gently.
If it’s slightly sticky, that’s okay; it will cook more.
Flip the torta carefully to cook the other side, adding a bit more oil if necessary.
Cook the other side for about 10-15 minutes until it’s fully cooked and dry.
Check doneness by inserting a toothpick; it should come out clean.
Remove from the skillet and let it cool slightly before serving.
