This jam is a staple in Turkish households, enjoyed on breakfast tables or as a filling in pastries. The tartness of the sour cherries pairs beautifully with sweet dishes, making it a versatile ingredient. In recent years, this jam has gained popularity beyond Turkey, finding its way into various international recipes and gourmet food markets.

Cornstarch can thicken the jam but may alter texture.
vanilla extract

Imitation vanilla is less expensive and provides flavor.
Remove the stem from a cherry and hold the fruit between two fingers. Grab a hold of a chopstick and position the smaller end into the stem hole. Gently but firmly press the chopstick down into the pit and push it out of the cherry. The other option is to use a cherry pitter which I have used in this video.
Place the pitted sour cherries in a cooking pot.
Turn on the stove-top on low flame.
Add one cup sugar. Please note that you can add more if you like to make it more sweet. I like to keep it a little tangy.
Let it simmer for 20 minutes or until the liquid/sauce thickens.
Turn off the heat and let it cool and come to room temperature.
Place in glass/mason jars and place in the refrigerator for up to 2 months.
