  • 4 large flour tortillas
  • 2 tbsp olive oil
  • 1/4 cup salsa (optional)

Instructions

  1. 1In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  2. 2Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. 3Add the diced bell peppers and onions to the skillet and sauté for about 3-4 minutes until softened.
  4. 4Pour the egg mixture into the skillet with the vegetables and cook, stirring gently, until the eggs are just set but still slightly runny, about 3-4 minutes.
  5. 5Remove the skillet from heat and stir in the shredded cheese until melted.
  6. 6Warm the tortillas in a separate skillet or microwave until pliable.
  7. 7Divide the egg and cheese mixture evenly among the tortillas, placing it in the center of each tortilla.
  8. 8Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to create a folded tortilla.
  9. 9In the same skillet, add the remaining olive oil and place the folded tortillas seam-side down. Cook for 2-3 minutes on each side until golden brown and crispy.
  10. 10Serve warm with salsa on the side, if desired.

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken, shredded (optional)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add diced onions and bell peppers to the skillet, sauté until softened, about 5 minutes.
  3. 3If using, add the shredded chicken to the skillet and stir to combine with the vegetables.
  4. 4Sprinkle garlic powder, cumin, salt, and black pepper over the mixture, stir well, and cook for another 2 minutes.
  5. 5Remove the skillet from heat and stir in chopped cilantro.
  6. 6Place one tortilla in the skillet over low heat, sprinkle half of the cheese evenly over the tortilla.
  7. 7Add half of the chicken and vegetable mixture on top of the cheese, then sprinkle the remaining cheese over the filling.
  8. 8Fold the tortilla in half to create a half-moon shape and cook until the bottom is golden brown, about 3-4 minutes.
  9. 9Carefully flip the quesadilla and cook the other side until golden and the cheese is melted, about another 3-4 minutes.
  10. 10Remove from the skillet and let it cool for a minute before slicing into wedges.
  11. 11Repeat the process with the remaining tortillas and filling.
  12. 12Serve warm with salsa, guacamole, or sour cream.
