This technique transforms the natural sugars in onions into a rich, sweet flavor, making them a beloved addition to many recipes. Yellow onions are often less expensive than other varieties.
Peel and finely slice 1 kilo of brown onions.
Transfer the sliced onions into a large bowl.
Bring a large heavy-based saucepan to high heat.
Add 3 tablespoons of clarified butter and 1 teaspoon of olive oil to the saucepan.
Allow the butter and oil to melt.
Add the onions to the saucepan and mix to coat them in the butter and oil.
Leave the onions to cook for 5 minutes without stirring.
After 5 minutes, stir the onions and leave them to cook for another 10 minutes.
Juice 2 oranges and set the juice aside.
After 10 minutes, stir the onions again and let them cook for 5 more minutes.
Add 1/2 cup of unrefined castor sugar and the orange juice to the onions.
Stir to combine and let the mixture cook down for 30 minutes, stirring every 5 minutes.
Once the onions reach a nice dark caramel color, turn the heat down to low and cook for 5 more minutes.
Remove the onions from the heat and allow them to cool down.
Transfer the cooled caramelized onions into a sterilized jar.
