In a large mixing bowl, combine 1/2 cup light brown sugar, 1 cup bleached all-purpose flour, 1/4 teaspoon baking soda, 1 teaspoon salt, and 1 cup quick cooking oats. Mix until the brown sugar is broken up and everything is evenly combined.

Add in 1/4 cup melted coconut oil and mix with your fingers until combined. It may look liquidy at first, but keep folding in the flour until it forms clumps.

Line an 8x8 inch square baking pan with parchment paper.

Press about 2/3 of the oatmeal mixture into the bottom of the baking pan, spreading it evenly with your fingers.

Spread 1/3 cup of orange marmalade over the oatmeal mixture, leaving some space at the edges to prevent burning.

Crumble the remaining oatmeal mixture over the top of the marmalade, pressing it down lightly to marry the layers together.

Place the baking pan in the preheated oven and bake for 35 minutes. Check for a light brown color, and if necessary, bake for an additional 5 to 10 minutes, watching closely to prevent burning.
