Cut chicken breast into patty size pieces, slicing the thicker part in half for even thickness.
Prepare three bowls: one with 1/2 cup all-purpose flour, one with 2 whisked eggs, and one with a mixture of 3/4 cup bread crumbs, 1 teaspoon seasoned salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon cayenne pepper, and 1/2 teaspoon black pepper.
Dip each chicken piece into the flour until fully coated, then into the egg mixture, and finally into the breadcrumb mixture, ensuring each piece is fully coated. Set aside and repeat with the remaining chicken pieces.
Mince 8 garlic cloves for the garlic Parmesan sauce.
Preheat the oven to 350°F.
In a large frying pan, heat enough olive oil to cover the base over medium heat. Once hot, add the breaded chicken pieces and cook until the coating is a light golden brown, about 1 minute on each side. Keep a close eye to avoid burning.
Transfer the browned chicken pieces to a baking pan lined with parchment paper and bake in the oven for 15 minutes at 350°F.
While the chicken is baking, warm up and lightly grill the buns on medium heat with about 1 tablespoon of butter per bun, face down. Check the bottom with a spatula and remove when done.
In a sauce pot, melt 1/2 cup (1 stick) of butter over low heat. Once melted, add the minced garlic and 2 to 4 tablespoons of grated Parmesan cheese, stirring constantly for about a minute to release the garlic flavor into the butter. Keep on low heat to let it simmer.
Check that the internal temperature of the chicken is at least 165°F. Once done, place each chicken patty in the buttered garlic Parmesan sauce, coating both sides, then place on the grilled bun.
Add more grated Parmesan over the top of the chicken and let it melt, then add pickle slices on top before covering with the bun.
