Heat olive oil in a skillet over medium heat until shimmering.
Add sliced onions and bell peppers; sauté until softened, about 5-7 minutes.
Stir in sliced mushrooms and garlic; cook until mushrooms are tender, about 3-4 minutes.
Season with salt and black pepper to taste.
Increase heat to medium-high; add sliced steak to the skillet.
Cook steak until browned and cooked through, about 4-5 minutes.
Melt provolone cheese over the steak mixture, covering the skillet for 1-2 minutes.
Slice hoagie rolls lengthwise without cutting all the way through.
Spread mayonnaise inside the rolls, if desired.
Fill each roll with the steak and cheese mixture.
Drizzle with hot sauce, if using, and sprinkle with parsley.
Serve immediately.
