Teriyaki Chicken Udon Noodles

14 oz chicken breast
½ tsp salt
½ tsp pepper
3 tbsp cooking oil
⅔ oz ginger
2.5 oz onion
2.5 oz carrot
7 oz udon noodles
4 oz bell pepper
⅓ oz garlic
chili pepper to taste
2 fl oz light soy sauce
½ cup teriyaki sauce
½ oz scallion

Heat 3 tbsp cooking oil in a pan over high heat.

Add 14 oz chicken breast, season with ½ tsp salt and ½ tsp pepper, and cook for 3-4 minutes.

Add ⅔ oz ginger and cook for 1 minute.

Add 2.5 oz onion, 2.5 oz carrot, and 4 oz bell pepper, cooking for 1 minute each on high heat.

In a separate pot, bring water to a boil and cook 7 oz udon noodles as indicated on the package.

Drain the water and rinse the noodles.

Add cooked noodles to the pan with the vegetables and chicken.

Add 2 fl oz light soy sauce, ½ cup teriyaki sauce, and ⅓ oz garlic, stirring to combine.

Add chili pepper to taste and cook for 1-2 minutes on medium heat.

Garnish with ½ oz scallion before serving.
