Turkey ham reduces fat while maintaining flavor

Soak great northern beans overnight and drain them.

Heat olive oil in a pot over low heat.

Add chopped onion, season with salt and pepper, and sauté until softened and translucent.

Add chopped carrot and celery to the pot, but do not sauté them too long.

Add the soaked beans to the pot along with the ham hock and parmesan rind.

Pour in chicken stock to cover the beans and ingredients.

Bring the mixture to a full boil, then reduce to a simmer and cook until beans are tender.

Adjust seasoning with salt at the end of cooking.
