Fava Beans Simmered in Chermoula

2 cups fresh fava beans
1/4 cup Moroccan olive oil
1 tsp cumin
1 tsp paprika
3 cloves garlic
1/2 cup cilantro, chopped
Salt to taste
1 lemon, juiced
2 cups water
1 cup carrots, chopped
1 cup zucchini, chopped
2 tablespoons Mina harisa

Shell fresh fava beans, removing the small sprout at the top and making an incision on the side of the larger beans.

Heat a bit of Moroccan olive oil in a pot.

Add cumin, paprika, garlic, cilantro, and salt to the oil and mix to coat.

Add lemon juice and enough water to cover the fava beans.

Bring the mixture to a boil.

Reduce to a simmer and cook covered for about 30 minutes until the beans are tender and the majority of the water has evaporated.

Boil carrots and zucchini in salted water with garlic until tender.

Drain the carrots and zucchini and toss them in the same blend of spices (chermoula).

Add a bit of Mina harisa to the carrots for extra heat.
