Add 1 cup of warm water to a bowl and ensure it feels warmer than your finger temperature.
Dissolve 1 teaspoon of sugar into the warm water.
Add 1 teaspoon of active dry yeast to the water and mix, then set aside for 5 minutes to activate.
In a mixer or bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt, and mix until combined.
Pour the yeast mixture into the flour mixture and mix until a dough forms.
Knead the dough by hand or with a mixer until it forms a ball, then flour a surface and knead a couple of times.
Place the dough in a bowl, cover with a tea towel, and let it rise in a warm place for about 30 minutes.
In a frying pan on medium heat, add some olive oil, then add 1/2 cup of chopped onion and 1 clove of minced garlic, and let brown for a few minutes.
Add diced tomatoes, 1 teaspoon of salt, 1 teaspoon of oregano, and 1 teaspoon of Italian herbs to the pan and let simmer for about 10 minutes.
Blend the sauce for a few seconds until it reaches a finely minced texture, leaving some texture if desired.
After 30 minutes, take the dough out, flour a surface, and knead it again before stretching it into a large circle.
Place a line of a mix of pepper jack and cheddar shreds around the edge of the dough.
Roll and fold the edge of the dough over the cheese to encase it.
Brush garlic oil on top of the crust for flavor and color (optional).
Spread the prepared sauce over the dough, leaving the stuffed crust edge clear.
Add the remaining vegan cheese shreds on top of the sauce, using about the whole bag for lots of cheesy goodness.
Add toppings of choice, such as red onion and vegan pepperoni, on top of the cheese.
Sprinkle extra Italian herbs on top of the pizza.
Preheat the oven to 425°F (218°C).
Bake the pizza for 12 to 15 minutes, checking the bottom to ensure it doesn't burn.
Remove from the oven and let cool slightly before slicing.
