Egg and Cress Sandwich

1/4 cup homemade mayonnaise
2 tablespoons chives, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices sourdough bread
2 tablespoons butter
1 cup british watercress, washed and trimmed
