Egg and Cress Sandwich

2 medium free range eggs
1 tsp Dijon or English mustard
1 tsp mayonnaise
3 tbsp mustard cress
a generous pinch of white pepper
a pinch of salt
4 thin slices of rye, granary or wholemeal bread

Cook the eggs in a pan of boiling water for 8 minutes.

Run the eggs under a cold tap until they’ve cooled down and then remove the shells. Set aside.

In a small bowl, mix together the mustard and mayonnaise.

Chop the cress into the bowl using a pair of scissors.

Add the cooked eggs and mash up the mixture with a fork.

Season with the white pepper and a pinch of salt.

Divide the mixture into two portions to make up the sandwiches.
