Begin by introducing the ingredients for the salad: avocados, boiled eggs, cucumber, jalapeno, red onion, red bell pepper, fresh parsley, lemon juice, fresh spinach, salt, pepper, and olive oil.
Chop 2 ripe avocados by quartering them and placing them in a bowl.
Chop 4 boiled eggs in half and then roughly chop them into bite-sized pieces, adding them to the bowl.
Chop 4 cups of fresh spinach, washed and cleaned, and add to the bowl.
Chop 1/2 of a red onion and add to the bowl.
Dice 1/4 cup of red bell pepper and add to the bowl.
Remove the seeds from 1 jalapeno, chop it finely, and add to the bowl.
In a separate bowl, prepare the dressing by adding 2 tablespoons of extra virgin olive oil, followed by salt and pepper to taste.
Combine all the ingredients in the bowl and stir gently to mix everything together.
Serve the salad on a bed of shredded lettuce and enjoy with club crackers.
