Slow-Cooker Chicken Stew with White Wine

2 lbs chicken thighs, boneless and skinless
2 tbsp olive oil
4 cups low FODMAP chicken broth
1 cup white wine
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
1 tsp fresh thyme
1 tsp rosemary
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
3 carrots, sliced
2 potatoes, diced
2 tbsp low FODMAP flour
1/2 cup cream
1 cup corn
2 tbsp fresh herbs, chopped (for garnish)

Heat oil in a large skillet.

Sear chicken thighs on both sides and place on a covered plate.

Add the chicken to the slow cooker.

Pour in low FODMAP chicken broth, white wine, Worcestershire sauce, balsamic vinegar, fresh thyme, rosemary, dried oregano, salt, and pepper.

Stir the mixture in the slow cooker.

Add sliced carrots and potatoes to the slow cooker.

Cover and cook for approximately 7 hours on low.

After cooking, remove a half cup of the broth and stir in low FODMAP flour, then return it to the mixture.

Allow the stew to thicken.

Add cream and corn, cook a little longer, and season to taste.

Serve garnished with fresh herbs.
