Preheat the oven to 375°F (190°C).
Heat olive oil in a pan over medium heat.
Add chopped onion and garlic; sauté until translucent, about 5 minutes.
Incorporate diced chicken and cook until no longer pink, about 7-10 minutes.
Season the mixture with salt, black pepper, and chopped parsley; remove from heat.
Lay one sheet of phyllo dough on a clean surface and brush with melted butter.
Layer additional sheets, brushing each with butter, until you have about 4-5 sheets stacked.
Place a portion of the chicken mixture along one edge of the dough.
Roll the dough over the filling to form a log, tucking in the sides as you go.
Place the rolled burek on a baking sheet lined with parchment paper.
Brush the top with more melted butter and beat an egg for an egg wash.
Bake in the preheated oven for 25-30 minutes, until golden brown.
Allow to cool slightly before slicing and serving.
