Add oregano and peppercorns to the vinegar mixture.
Pour the vinegar mixture over the vegetable mixture.
Toss to coat the vegetables evenly in the brine.
Transfer to a clean jar, pressing down to remove air pockets.
Seal the jar and refrigerate for at least 24 hours before serving.
For best flavor, allow to marinate for 3-5 days.
