Cottage Cheese Stuffed Shells

2 cups cottage cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped

Preheat the oven to 375ยฐF (190ยฐC).

Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

In a mixing bowl, combine the cottage cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, spinach, garlic powder, salt, black pepper, and red pepper flakes (if using). Mix well until combined.

Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.

Stuff each cooked pasta shell with the cheese and spinach mixture and place them in the baking dish, open side up.

Pour the remaining marinara sauce over the stuffed shells, ensuring they are well covered.

Sprinkle the remaining mozzarella cheese on top of the sauce.

Cover the baking dish with aluminum foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
