Rinse 1 pound of mussels under cold water and place them in a bowl.

Check that all mussels are closed; if any are open, flick or tap them to see if they close. Discard any that do not close or have cracked shells.

Lay down a 10-inch cast iron skillet on the grill and add a foil pouch with wood chips.

Drizzle 1-2 tablespoons of olive oil into the skillet.

Ignite the grill and preheat for about 15 minutes until the skillet is hot and the pouch is generating smoke.

Add 2 minced shallots to the skillet and mix them around with a wooden spoon. Cook for 1 minute with the lid closed.

After 1 minute, add 2 cloves of minced garlic to the skillet and mix well with the shallots.

Add 1/2 teaspoon of red pepper flakes and salt and pepper to taste; mix everything together.

Add the mussels directly into the skillet and pour in 1/2 cup of white wine.

Loosely tent the skillet with aluminum foil and close the lid to trap steam.

After about 4 minutes, check the mussels and give them a stir; some should be opening and turning a golden color.

Tent the skillet again with aluminum foil and let the mussels cook for a total of 5-7 minutes, stirring once more to coat them in the sauce.
