Cotechino Pie hails from the Emilia-Romagna region of Italy, where cotechino, a traditional pork sausage, is often enjoyed during festive occasions, especially New Year's. This dish combines the rich flavors of cotechino with a flaky pastry, making it a comforting centerpiece for winter gatherings. Today, variations can be found across Italy, with some incorporating different meats or vegetables, reflecting local tastes and traditions.

Prepare the vegetable broth for the lentils. Rinse lentils and boil in water for about 20 minutes, then drain.
Cook the cotechino in boiling water for 10 minutes or according to package instructions. Drain and cool in cold water, then remove from packaging.
Finely chop carrot, celery, onion, and rosemary in a mixer or by hand.
Heat olive oil and butter in a pan, then add the chopped vegetables and cook for 5 minutes.
Add lentils seasoned with salt and pepper to the pan and cook for 15 minutes with some broth, adjusting for consistency.
Blend the lentils to a puree using a mixer or hand blender.
Roll out puff pastry, place lentil cream in the center, add cotechino, and cover with more cream.
Fold the pastry flaps over the cotechino and seal the ends like a candy wrapper.
Cut excess dough, roll it out, and make decorations from it.
Place decorations on the pastry, brush with a mixture of yolk and cream, and bake in a preheated oven at 180°C (355°F) for 30 minutes.
Let cool for 10 minutes before cutting.
