Remove the husks from the corn, discarding the first few that are too thick and dirty.
Reserve the softer husks for wrapping the humitas.
Use 12 ears of corn, noting that each ear will yield about 1 to 1.5 humitas.
Grate the corn kernels without grinding them too finely to keep some texture.
Reserve the corn cobs for later use in the cooking process.
Sauté chopped onion in butter or oil until soft, adding a pinch of salt.
Combine the sautéed onion with the grated corn, adding salt, sugar, and chopped basil.
Prepare the husks by trimming the tough ends and cleaning them.
Layer two husks together and place a generous portion of the corn mixture in the center, adding cubes of cheese.
Fold the husks over the filling and tie them securely with strips of husk.
Place the wrapped humitas in boiling water with reserved corn cobs for flavor.
Cover and steam for about 40-45 minutes, checking for doneness by the color change of the husks.
