1 tsp olive oil
1 tsp cornstarch or cornflour
1/2 cup pasta water
1/4 tsp salt (optional)
1 tsp dark soy sauce
1 tsp vinegar
1/2 tsp sugar
1/2 tsp pepper
1/2 tsp cornstarch/cornflour
2 tsp oil
1 tbsp butter
2 tsp chopped garlic
1 tsp red pepper flakes
1 tsp Italian seasoning
150 grams of spaghetti or dry Italian noodles

Cook pasta in salted water according to the package directions. Reserve 1 cup of pasta water. Drain and keep it aside.

Marinate the chicken in salt, pepper, and olive oil. Sprinkle cornstarch over it and combine, and keep it aside.

In a small bowl, combine pasta water, salt, dark soy sauce, vinegar, sugar, pepper, and cornstarch. Your sauce mix is ready. Keep it aside.

Heat 2 tsp oil and 1 tbsp butter over medium heat. Add the chicken pieces to the pan, leaving some space between them so they cook crispy. Flip the chicken once its sides start to turn golden. Cook until golden on the other side too. Do not aim for a dark brown color, or the chicken will get overcooked.

Remove the chicken to a plate, leaving the excess oil in the pan.

Reduce the heat and add 1 tbsp butter. Add garlic. Sauté until light golden. Add red pepper flakes and Italian seasoning. Cook for a few seconds.

Increase the heat to medium and add 2 tbsp water to deglaze the pan.

Stir the prepared sauce and add it to the pan. Cook, stirring continuously until the sauce thickens.

Add chicken back to the pan and cook it in the sauce for a minute. Add cooked pasta.

Combine. Taste and adjust the seasoning.
