Grate a small carrot to yield about half a cup.

2

Add two cans of diced tomatoes to a blender and blend on low for about one minute until smooth.

3

Transfer the blended tomatoes into a pot.

4

Add a small finely chopped onion and 3-4 cloves of finely chopped garlic to the pot.

5

Add the grated carrot to the pot.

6

Stir in 1 teaspoon of dried basil, 1/2 teaspoon of thyme, 1/2 teaspoon of oregano, and 1/4 teaspoon of sage.

7

Add 1 teaspoon of freshly ground black pepper and 1/2 teaspoon of salt to the pot.

8

Optionally, add 1-2 tablespoons of sugar to sweeten the sauce.

9

Add 1 tablespoon of tomato paste to thicken the sauce.

10

Add a couple of tablespoons of olive oil and stir well.

11

Cover the pot and bring the mixture to a boil.

12

Once boiling, reduce the heat to low and allow the sauce to simmer for about 35 to 40 minutes.

While the sauce is simmering, cook pasta in a pot of boiling salted water until al dente, about 9-10 minutes.

14

After 40 minutes, the sauce should be thickened and ready to serve over the cooked pasta.
