This cake is traditionally associated with celebrations and special occasions, embodying the rich flavors of its namesake region. Today, it enjoys popularity worldwide, with variations that include different types of chocolate and fruit fillings.

Mix eggs with sugar until completely white and very foamy.
Add milk, sunflower oil, and a pinch of salt, and mix well.
Sift in flour, unsweetened cocoa, and baking powder, and stir a little with the mixer off to avoid flying flour.
Mix everything until fully integrated.
Add boiling water to hydrate the cocoa and make the cake moist.
Pour the mixture into a greased mold (using a special spray or butter).
Bake in the oven at 180°C for 1 hour, checking with a wooden stick for doneness.
After 15 minutes, unmold the cake and place it on a rack to cool completely.
Prepare the syrup by boiling 200 ml of water with 60 g of sugar until dissolved, then add 1 tablespoon of Kirsch and let it cool.
Whip 500 ml of very cold cream with vanilla until it starts to thicken, then add sugar and finish whipping until just right.
Trim the top of the cooled cake if it has swelled, and divide the cake into two equal parts.
Soak one part of the cake with the syrup, spread whipped cream on it, and add fresh cherries generously.
Soak the second part of the cake and place it on top of the first layer.
Fill in any gaps with whipped cream and apply a thin layer to smooth out the cake's surface.
Chill the cake in the fridge while preparing chocolate shavings for decoration.
Decorate the cake with chocolate shavings and poached whipped cream balls filled with cherries.
Chill the cake for at least an hour before serving.
