Combine 60 grams whole milk, 27 grams water, and 20 grams bread flour in a small pot and whisk together.
Place the pot over medium heat and whisk continuously until thickened, about 25-30 seconds.
Heat 120 grams whole milk to about 95°F (35°C) and add 9 grams instant yeast. Let sit for about 8 minutes.
In a stand mixer bowl, combine 320 grams bread flour, 35 grams sugar, and 7 grams fine sea salt. Mix until incorporated.
With the stand mixer running on low speed, add the milk and yeast mixture, then add the Tang song paste, 1 whole egg, and 1 egg yolk.
Increase mixer speed to medium-low and mix until thoroughly incorporated, scraping down the sides as needed.
Gradually add 42 grams softened unsalted butter and mix until incorporated.
Let the stand mixer knead the dough for about 5-8 minutes until smooth.
Lightly grease a medium bowl and place the dough seam side down, cover with a damp towel, and let rise in a warm area for 1-1.5 hours until doubled in size.
Punch down the dough, lightly flour a work surface, and divide into 6 even pieces weighing about 95-105 grams each.
Shape each piece by stretching and folding to the center, then flip seam side down and create tension by pulling toward you.
Place shaped dough balls on a rimmed baking sheet lined with greased parchment paper, spaced about 2.5 inches apart.
Cover with an inverted rimmed baking sheet or plastic wrap and let rise at room temperature for 1-2 hours until doubled.
Make an egg wash with 1 whole egg and a splash of whole milk, then brush the tops of the buns.
Bake at 375°F (190°C) for 16-18 minutes until deep golden brown.
Remove from the oven and brush generously with melted butter, then cool on a wire rack.
