Combine warm milk and yeast, whisk, and set aside for 10 minutes until foamy.
In a mixing bowl, combine bread flour, sugar, and salt, and whisk well.
Using a stand mixer on low speed, drizzle in the yeast mixture after it has bloomed.
Add 2 whole eggs and 2 egg yolks, mixing until combined.
Drizzle in melted butter and mix at higher speed for about 5 minutes until incorporated.
Shape the dough into a sphere and place it in an oiled proofing bowl, covering with a damp cloth.
Let the dough rise in a warm place (oven with light on) for about 1 hour until doubled in size.
Punch down the dough to deflate it and weigh the entire dough to divide into 12 equal portions (99 grams each).
Shape each portion into a round bun and place on a baking sheet, covering to rise again for 45 minutes to 1 hour.
Glaze the buns with a mixture of 1 whole egg and 1/2 tablespoon milk.
Bake in the oven at 380°F for 15 minutes.
