1 tsp minced garlic
2 tomatoes
1 tsp red chili powder
2 tsp coriander powder
1/2 tsp garam masala powder
1 cup basmati rice
1 cup spinach
1 1/2 cups water
juice of 1/2 a lemon

Start by making a marinade for the chicken with 2 tbsp yogurt, 1/4 tsp salt, 1/4 tsp red chili powder, 1/4 tsp garlic powder, 1/4 tsp black pepper powder, and 1/4 tsp garam masala powder; whisk together.

Add 200 g of cubed boneless chicken breast to the marinade and mix well to coat the chicken; let it rest for at least 30 minutes.

In a pan, heat 2 tbsp of oil and add the marinated chicken pieces; brown the chicken on both sides, then remove from the pan.

In the same pan, add 1 tsp of ghee and let it melt; add 1 tsp of lightly crushed peppercorns, 2 torn bay leaves, 3 skinny cinnamon sticks, 1 tsp cumin seeds, 4 cloves, 4 lightly bashed green cardamom pods, and 2 lightly bashed black cardamom pods; stir to release flavors.

Add 1 finely chopped onion and 1 tsp minced garlic to the pan; cook until the raw smell of garlic goes away.

Add 2 finely chopped tomatoes and stir; season with salt, 1 tsp red chili powder, 2 tsp coriander powder, and 1/2 tsp garam masala powder; cook until the tomatoes break down and oil separates.

Add 1 cup of soaked basmati rice to the pan and gently mix with the masala; then add 1 cup of finely chopped spinach and stir well.

Pour in 1 1/2 cups of water and juice of 1/2 a lemon; stir gently and add more water if needed; add the browned chicken back on top of the rice.

Cover the pan with a lid and let it cook for about 15 minutes until the rice is done; check for doneness and fluff the rice.
