Roasted Cauliflower

1 whole cauliflower
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon crushed cumin
1/2 teaspoon red chili powder
1/2 teaspoon butter
1 tablespoon chopped garlic
1/4 cup water
1 teaspoon lime or lemon juice
1/4 teaspoon salt
1/2 bunch coriander
1 clove garlic
1 green chili
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil
1 tablespoon vinegar

Cut a whole cauliflower into center slices to make cauliflower steaks.

Place the cauliflower pieces onto a flat sheet.

Spread around 1 teaspoon of olive oil on each piece.

Add around 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of crushed cumin, and 1/2 teaspoon of red chili powder to each piece.

Rub all the spices and oil into the cauliflower pieces.

Gently flip the pieces and add the same spices on the other side.

Let the cauliflower pieces marinate in the oil and spices for around 15 to 20 minutes.

Heat a pan and add around 1/2 teaspoon of olive oil.

Gently place the marinated cauliflower pieces onto the pan.

Add around 1/2 teaspoon of butter on each piece and spread it gently all over the pan.

Cook on medium flame and add around 1 tablespoon of chopped garlic; let it sizzle.

Cook for 2 minutes on this side.

After 2 minutes, gently flip the cauliflower and check for brown marks.

Add around 1/4 cup of water and squeeze around 1 teaspoon of lime or lemon juice.

Sprinkle around 1/4 teaspoon of salt and cover the pan.

Let it cook for 2 minutes on this side.

After about 2 minutes, check if the cauliflower is cooked well.

Keep it uncovered and let it cook for about 1 minute to ensure thorough cooking.

Take around 1/2 bunch of coriander (including sticks) and add to a mixer jar.

Add 1 clove of garlic, 1 green chili, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1/4 cup of olive oil, and 1 tablespoon of vinegar to the jar.

Close the lid and grind into a coarse mixture for the dip.

Plate the cooked cauliflower pieces.

Spread the coriander dip on the cauliflower pieces before serving.
