Clean the kidneys by removing the membrane and as much fat as possible without cutting into the kidney.

Cut the kidneys into slices approximately one finger thick to prevent them from drying out.

Place the cleaned kidneys in a bowl, add a little salt and lemon juice or vinegar, and cover. Refrigerate for at least 40 minutes to 1 hour.

After marinating, wash the kidneys well and heat olive oil in a wok or frying pan over medium-high heat.

Cook the kidneys for 3 to 4 minutes on each side until they are very golden, making sure not to move them too much to avoid boiling.

Remove the kidneys from the pan and lower the heat. Add more olive oil and chopped onion, seasoning with a little salt, and cook over low heat for about 4 to 5 minutes until softened.

Add a lot of chopped garlic and parsley to the onions and mix.

Increase the heat and add white wine, cooking until the alcohol evaporates, which takes about 2 minutes. You can tell it's ready when the strong alcohol smell is gone.

Season with salt and black pepper to taste, lower the heat to minimum, and cook for no more than 10 minutes.
