Easy Hot Dog Jambalaya recipe

Heat olive oil in a large pot over medium heat until shimmering.

Add diced onion, bell pepper, and celery; sauté until softened, about 5 minutes.

Stir in minced garlic and cook until fragrant, about 1 minute.

Slice hot dogs and add to the pot; cook until browned, about 5 minutes.

Add canned tomatoes, chicken broth, and rice; stir to combine.

Season with cajun seasoning, bay leaves, salt, and black pepper.

Bring to a boil, then reduce heat to low and cover.

Simmer for 20-25 minutes, or until rice is tender and liquid is absorbed.

Remove bay leaves and fluff rice with a fork.

Garnish with chopped green onions and parsley before serving.
