Break Mama noodles into quarters.
Add pork flavor seasoning, sugar, and garlic oil into a mixing bowl.
Prepare vegetables: slice carrots, onions, and chop green cabbage.
Boil a pot of water and cook the noodles for exactly 1 minute until loosened.
Run cold water over the noodles for 5 seconds to stop cooking, then shake off excess water.
Add the noodles to the seasoning bowl and toss to mix well.
Heat vegetable oil in a wok.
Add minced garlic to the oil and sauté until golden.
Add the sliced vegetables and stir-fry until they are tender-crisp.
Add soy sauce and fish sauce to the vegetables and stir.
Push the vegetables to the side and add eggs to the wok, breaking the yolks.
Let the eggs cook halfway, then add the noodles on top of the eggs.
Toss everything together and let it sear for a bit.
Once the eggs are cooked and browned, turn off the heat.
Add chopped roma tomatoes, green onions, and cilantro, and mix well.
