Lentils with Pork Ribs

300 g. of pardina lentils
1.3 liters of meat broth
1 pork rib chopped
2 cloves of garlic, chopped
1 chopped onion
1 diced carrot
1/2 red bell pepper diced
1/2 green bell pepper, diced
1 teaspoon of sweet paprika
1 bay leaf
Salt to taste

Rinse the pardina lentils and set aside.

In a pot, heat some olive oil and sauté the chopped onion, garlic, carrot, and bell peppers until softened.

Add the chopped pork rib and cook until browned.

Stir in the sweet paprika and bay leaf.

Pour in the meat broth and bring to a boil.

Add the lentils and season with salt to taste.

Reduce heat and simmer until the lentils are tender and the pork is cooked through.
