Birria is a traditional Mexican dish originating from the state of Jalisco, often served at celebrations and special occasions. It is known for its rich flavors and is typically made with goat meat, although variations exist using beef or lamb. The dish has gained popularity beyond Mexico, especially in the United States, where it is often served as a taco filling or in a broth.

Make the Birria seasoning by mixing 1 cup of Chile wajo powder, 3 tbsp of chicken bouillon, 2 tbsp of onion powder, 2 tbsp of garlic powder, and 1 tsp of salt.
Store the seasoning in the refrigerator or freezer, checking expiration dates on spices.
Slice 4 lbs of chuck roast down the middle, then slice into smaller pieces.
Add 5 cups of kettle hot water to the Instant Pot and click on pressure cook.
Add the sliced beef to the pot.
If desired, add beef bones, 3 carrots, 3 bay leaves, and 3-4 cups of Birria seasoning to the pot.
Mix all the ingredients in the pot to ensure the seasoning is combined with the water.
Pressure cook for 18 minutes and perform a quick release after cooking.
Chop the cooked beef into smaller pieces instead of shredding with a fork.
Pour some of the broth over the chopped meat to keep it juicy.
Assemble tacos using the beef and desired toppings.
For Birria-style street corn, add butter, corn, and 1 tbsp of Birria seasoning in a bowl.
If you have leftover broth, add 1 cup to the corn mixture and mix well.
Top the street corn with Cotija cheese, additional Birria seasoning, Birria chili oil, and lime or lemon juice.
