Choux au Craquelin
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Mix brown sugar, plain flour, and butter in a bowl.
Split the mixture into two parts; color one part red and the other orange.
Roll the colored mixtures between two sheets of baking paper until thin.
Freeze the rolled mixtures for at least 30 minutes.
In a pot, mix water, milk, butter, sugar, and salt, and bring to a boil.
Once boiling, add plain flour and cook for around 5 minutes over medium heat while mixing continuously.
Transfer the mixture to a mixing machine and let it cool slightly before adding eggs one by one.
Pipe the choux pastry into desired shapes, ensuring they are uniform in size.
Take the frozen colored mixtures from the freezer and cut out coins with a pastry ring.
Place the coins on top of the choux pastry shapes.
Bake at 190 degrees Celsius for 12 minutes, then reduce the temperature to 160 degrees Celsius and bake for an additional 15 minutes, adjusting times based on size.
Let the pastries cool slightly before decorating with cottage cheese.
Use cottage cheese to create mushroom shapes and black food coloring for pumpkin designs.
