1 teaspoon ginger powder
1 teaspoon all-purpose seasoning
1 teaspoon smoked paprika
2 teaspoons jerk seasoning
1 tablespoon pimento seeds
2 teaspoons garlic powder
1 tablespoon fresh thyme
2 stalks green onions (scallions)
5 cloves garlic
2 inches ginger
15 cups hot water
1 teaspoon salt
1 cup pineapple juice
1 cup barbecue sauce
1/2 cup ketchup
1/2 cup light brown sugar
1 cup orange juice
1 teaspoon dark soy sauce
1 tablespoon honey

Wash pigtail and soak in water and lime juice to remove impurities.

Add 15 cups of hot water to a large pot and add pigtail.

Add ginger powder, all-purpose seasoning, smoked paprika, jerk seasoning, pimento seeds, garlic powder, fresh thyme, green onions, garlic, ginger, salt, and pineapple juice to the pot.

Cover and boil the pigtail on medium heat for just over 1.5 hours until tender.

Drain the water from the pigtail and set aside.

In a separate pot on low heat, combine pineapple juice, orange juice, ginger, dark soy sauce, barbecue sauce, ketchup, and light brown sugar to make the sauce.

Whisk the sauce ingredients together and add jerk seasoning and wet jerk marinade to taste.

Add the pigtail to the sauce and cook uncovered for 5 minutes to thicken the sauce.

Preheat the oven to 180 degrees Celsius and transfer the pigtail to a baking tray.

Broil the pigtail in the oven for 10 minutes, keeping an eye on it to prevent burning.
